Traditional German Potatoe Fritter
Always a good one for every party because you can keep them warm over a long time in the oven. They can be eaten sweet with apple puree or as a starter with smoked salmon and cream cheese (there is lactose free cream cheese, unfortunately difficult to find in Dublin e.g.)
Time: 20-30 Minutes (I am a relaxed cook)
Shopping list:
1kg Potatoes
1 big onion (I like it with 1.5 onions)
Salt, pepper, nutmeg
1 Egg
2-3 Spoon of flour
Oil for frying
EXTRA: Either smoked salmon, cream-cheese and chives Or apple puree
How to make it:
First grate the potatoes with the cheese grater (big holes!)and squeeze as much liquid as possible out of them. Mix the dried potato pieces with the onions (please cut in little cubes), salt, pepper and nutmeg (try other spices as well - be creative!). Scramble the egg and mix it in the mass. Afterwards carefully put the flour in order to bind the mass.
Now take a pan and heat up the oil. As soon as it is hot start to form flat (thickness 1cm), round (size of a coffee cup plate) potato-cakes and fry them. When yellow-brown-yummie take them out and press them in between kitchen roll to get rid of the oil.
No matter if you eat them now sweet or smokey or crazy (? please comment the suggestions) I wish you "Guten Appetit!" as we say in Germany! :D
