Traditional German Potatoe Fritter

Always a good one for every party because you can keep them warm over a long time in the oven. They can be eaten sweet with apple puree or as a starter with smoked salmon and cream cheese (there is lactose free cream cheese, unfortunately difficult to find in Dublin e.g.)

Time: 20-30 Minutes (I am a relaxed cook)

Shopping list:
1kg Potatoes
1 big onion (I like it with 1.5 onions)
Salt, pepper, nutmeg
1 Egg
2-3 Spoon of flour
Oil for frying

EXTRA: Either smoked salmon, cream-cheese and chives Or apple puree

How to make it:
First grate the potatoes with the cheese grater (big holes!)and squeeze as much liquid as possible out of them. Mix the dried potato pieces with the onions (please cut in little cubes), salt, pepper and nutmeg (try other spices as well - be creative!). Scramble the egg and mix it in the mass. Afterwards carefully put the flour in order to bind the mass.

Now take a pan and heat up the oil. As soon as it is hot start to form flat (thickness 1cm), round (size of a coffee cup plate) potato-cakes and fry them. When yellow-brown-yummie take them out and press them in between kitchen roll to get rid of the oil.

No matter if you eat them now sweet or smokey or crazy (? please comment the suggestions) I wish you "Guten Appetit!" as we say in Germany! :D

BBQ: How to make herb butter or herb butter baguette

Every decent BBQ should be accompanied by a self-made herb butter or even better... herb butter baguette.

Time: 10 Minutes

Shopping list:
- 1 pack of butter (margarine for the lactose intolerant friends here; recommendation: Golden Olive -be careful includes a bit of lactose)

- fresh parsley, chives and basil (of course you can take as well thyme, oregano aso... feel free to put different herbs); in case of emergency take some herb mixture (frozen or the dried ones)

- sweet pepper (Paprika) powder (secret ingredient)
- salt, pepper
- fresh garlic (!!!)
- lemon (for the lemon fans like me)

How to make the her butter:

mix the butter (if too hard, put in microwave for max 10 sec) with the herbs (a lot of herbs) and then add about 2 teaspoons of sweet pepper (oh what a nice colour!!) and salt and pepper. Add 2-3 pieces of garlic (cut small or squeeze) and finally some lemon peel (depending on how much you like it).

Herb Butter Baguette:
Take a baguette and make with a knife slots in it without cutting through the bread (but make them deep). Now comes the fun part, take a knife and try to put in the slots the herb butter without breaking the baguette. Is a bit of stupid work and gets on the nerves but be patient. When it's done put the baguette in the preheated oven (or on the BBQ grill) for about 5-10 minutes on 80-100 degrees. When all the herb butter is melted it is done.

For newstarter in the herb-butter-baguette kitchen try it with the not yet ready baked baguettes.

I wish you a lot of fun eating herb butter and herb butter baguettes - ENJOY
